Chili shredded Beef

Another recipe for shredded beef !

Ingredients

  • 1.5 kg (3.3 lbs) beef roast
  • 1 onion
  • 1 can tomato paste
  • 1 cup beef broth
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • salt and pepper up to you

Mix the spices and rub it on the meat. Brown it and dump it in the slow cooker with the chopped onion.

Put the tomato paste and the chicken broth in the pan used to brown the meat and cook until it’s boiling. Put the sauce in the slow cooker.

Cook on low for 8h

Salsa Pulled Pork

Another pulled pork, also really easy to do

Ingredients

  • 1.5 kg (3.3 lbs) pork roast
  • 1 onion
  • 4-5 garlic cloves
  • 1 salsa bottle
  • salt and pepper up to you

Slice one onion and put it in the bottom of the slow cooker.

Trim the meat from any visible fat,  stuff it (make some holes and put inside) with the garlic cloves and add it to the slow cooker.

Pour the salsa sauce on top of it.

Cook for 8-10h on low.

Teriyaki (pulled) pork

This one is soooooo easy to make and so good. I wouldn’t believe it if i didn’t try it.

Ingredients

  • 1 kg (2.2 lbs) pork loins
  • 1 1/2 cup apricot jam
  • 1/4 cup teriaky sauce
  • 5 tablespoons dijon mustard
  • 1 tablespoon ground ginger

Put the meat in the slowcooker.

Mix all the other ingredients and pour on the meat.

Cook on low for 7h.

That’s all. Preparation time = 2 minutes. The pork is so tender that can even split it with your fork !

Chili V2

Chili is the meal I do when i don’t know when I have no idea for a new meal. This time I decided to change it a bit to try some new flavors (and also less servings). This one is an impressive mix of flavors and spices.

Ingredients

  • 1.5 kg ground beef (lean or extra-lean)
  • 2 can red kidney beans (undrained)
  • 1 can chickpeas (drained)
  • 2 cans of tomato paste
  • 1 onion
  • 1 green sweet bell pepper
  • 2 tablespoons chili
  • 2 tablespoons dried garlic
  • 2 tablespoons paprika
  • 1 tablespoons cumin
  • 1 tablespoon cayenne pepper
  • 1 tablespoon turmeric
  • 1 tablespoon oregano
  • 1 tablespoon coriander
  • 1 tablespoon parlsey
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon hot salsa sauce
  • 2 bay leaves
  • 10 basil leaves chopped
  • 1/2 tablespoon thyme
  • salt and pepper up to you

Start browning (ie cook the meat until it’s brownish) the ground beef.

During this time, chop the onion and the bell pepper and put it in the slow cooker.

When the whole meat is brown, put it in the slow cooker (try to remove the juices).

Add all the spices (that almost looks like a painting !).

Mix everything and cook on low for 8h.

Pulled Beef

We made pulled pork earlier, seems fair to do the same with beef now !

Pulled Beef

With bell peppers

Ingredients

  • 2 kg (4.4 lbs) beef roast
  • 1 onions
  • 6 garlic cloves
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 tablespoon celeri salt
  • 1 tablespoon black pepper
  • 1/2 tablespoon cayenne pepper
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon herbes de provence
  • 1/2 cup coke (I’d recommend using beer or ginger ale instead)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Sriracha
  • Optional : vegetables like bell peppers
  • salt and pepper up to you

Chop the onion (and vegetables if you have some) and put it in the crockpot.

Trim the meat from any visible fat,  stuff it with the garlic cloves. Combine all the solid spices in a bowl and rub over the meat, place it in the slowcooker.

Mix all the liquids and pour it on the meat.

Cook on low for 10h.

I don’t really like the sauce with the coke so if I had to do it again, I will probably use ginger ale instead (I don’t like beer eh).

Spanish chicken

Hum good. Definitely not vegan

This one will probably give a heart attack to vegans.

Ingredients

  • 1 kg (2.2 lbs) chicken breast
  • 1 kb (2.2 lbs) italian sausage
  • 1 onion
  • 4 garlic cloves
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 can diced tomatoes, non drained
  • 1 can tomato paste
  • 1 can artichoke heart, drained
  • 1 can sliced olives
  • 2 tablespoon paprika
  • 2 tablespoon thyme
  • 2 tablespoon origano
  • 1 tablespoon crushed red peppers
  • salt and pepper up to you

Chop the onion, mince the garlic cloves, prepare the bell peppers and cut the sausage and chicken in cubes. Dump everything in the slow cooker, add the diced tomatoes, tomato paste and the spices.

Cook on low for 6-8h. 20 minutes before the end, add the artichoke and olives and stir.

Beef Stew

A healthier meal compared to before the one last week but still as good !

Beef Stew

Ingredients

  • 1.5 kg (3.3 lbs) beef stew (or beef cut in cubes)
  • 1 onions
  • 3 big sweet potatoes
  • 6 carrots
  • 1 cup of peas
  • 1 cup mushrooms
  • 2 cup beef broth
  • 3/4 cup flour
  • 1 tablespoon minced garlic
  • 1 tablespoon paprika
  • 1 tablespoon thyme
  • 1 tablespoon origano
  • 1 tablespoon herbes de provence
  • 5 bay leaves
  • salt and pepper up to you

Peel the sweet potatoes and carrots and cut them into small pieces (about 2cm cubes). Chop the onion and put the vegetables aside for now.

Take a plastic bag (like ziploc) and put inside the flour, the garlic and the paprika and mix it. Add the beef cubes inside to coat them with flour, brown them in a skillet and place the meat at the bottom of the crockpot. Do that for all your beef cubes.

Take your vegetables and dump them on top of the beef. Add the 2 cup of beef broth and all the spices left.

Cook on low for 9h. One hour before the end, open up the slow cooker and add the cup of mushrooms and peas.
